Tofu is braised with tomato, chilies, and a wicked blend of spices before being scooped onto soft tortillas and topped with guacamole. Time: 35 minutes Makes: 8 tacos Cost per taco: $1.90 INGREDIENTS • 1 package firm tofu (14 or 16 oz) • 1 tablespoon olive oil • 1 can black beans • 1 can corn • 8 large flour tortillas • 2 avocados SOFRITA SAUCE • 1 tomato • 1 small yellow onion • 1 red bell pepper • 1 chipotle pepper • 1 cup fresh cilantro • 3 large cloves garlic • juice from ½ a lime • 1 teaspoon oregano • 1 teaspoon coriander • 1 teaspoon salt • 2 teaspoons ground chili pepper (use two different kinds, found in the Mexican section of grocery stores) • black pepper to taste INSTRUCTIONS 1. Drain tofu by placing on a paper towel, and setting a heavy plate on top for 15 minutes. 2. Blend all the sofrito sauce ingredients together in a blender or food processor for about a minute, or until it looks like salsa. 3. Heat olive oil in a large pan over medium heat. Crumble tofu into a bowl with your hands, then drop it into the pan. Cook for 5 minutes, stirring once or twice, to lightly brown. 4. Pour 1½ cups of the sofrito sauce onto the tofu. Add black beans and corn. Stir well to mix, then lower heat and simmer for 10 minutes. 5. Lightly toast the tortillas. Spoon the sofritas onto the tortillas, then top with avocado and fresh cilantro.
